How to prepare Kaju Barfi

 


Ingredients:

  • Cashew nuts (kaju)
  • Sugar
  • Milk (optional)
     Water
  • Saffron
  • Cardamom powder
  • Ghee (clarified butter)
  • Silver leaves (for decoration, optional)
The main ingredients are finely ground cashews and sugar, with the addition of a small amount of water and cardamom for flavor.

Procedure:

  • Blend cashew nuts and cornflour in a blender to make a smooth powder.
  • Heat sugar and water in a pan.
  • Cook till uniform string consistency is reached.
  • Add cashew-nut powder to the pan.
  • Cook on low flame for 3-4 minutes, till the mixture start to leave the sides of the pan.
  • Grease a thali with ghee.
  • Spread the mixture evenly on the greased thali.
  • Cut into desired shape.
  • Garnish with silver foil.

Make Sugar Syrup:

  • In a non-stick pan, combine sugar and water. Heat over low-medium flame until the sugar dissolves completely.
  • Add a pinch of saffron strands to the syrup for flavor and color.

    • Once the sugar syrup reaches a one-string consistency (when a drop of syrup forms a thin string), add the ground cashew powder.
    • Stir continuously to avoid lumps.
  2. Cook the Mixture:

    • Keep stirring the mixture over low heat until it thickens and starts leaving the sides of the pan.
    • Add a teaspoon of ghee and cardamom powder. Mix well.
  3. Shape the Kaju Katli:

    • Transfer the mixture onto a greased plate or parchment paper.
    • Flatten it with a rolling pin to about ¼-inch thickness.
    • Cut it into diamond or square shapes using a knife.
  4. Decorate:

    • If you like, place silver leaves on top of each piece for decoration.
  5. Cool and Serve:
